Tuscan Sunset


The Spirit


Tuscan Gin — Italian Mediterranean in a bottle. Rosemary, sage, lemon myrtle, juniper. Complex and herbal and absolutely worth making this drink for.


What You'll Need — serves 1


  • 45 ml Tuscan Gin
  • 20 ml fresh lemon juice
  • 15 ml rosemary simple syrup (steep a fresh rosemary sprig in hot 1:1 syrup for 10 minutes, strain and cool)
  • 90 ml dry prosecco, very cold
  • Ice (for the shaker — this drink is served over ice in a wine glass)
  • Lemon slice and fresh rosemary sprig (garnish)

Glass: Large wine glass, filled with ice

Garnish: Lemon slice, fresh rosemary


Instructions


  1. Combine gin, lemon juice and rosemary syrup in a shaker over ice. Shake well for 8–10 seconds.
  2. Fill a large wine glass with fresh ice.
  3. Strain the shaker mix over the ice.
  4. Top slowly with cold prosecco poured down the side of the glass to keep the fizz.
  5. Stir once gently from the bottom.
  6. Add a lemon slice and a rosemary sprig — press it against the glass or rest it across the ice.

The Story


The Tuscan Gin was a labour of love — finding the balance between authentic Italian botanicals and the clean structure of a good gin. Rosemary is the loudest note, with sage and lemon myrtle providing depth. This cocktail lets all of that breathe, with the prosecco adding a lightness that keeps it from being heavy.


The rosemary syrup takes 15 minutes to make and keeps for two weeks in the fridge. Make extra.
