Tuscan Gin — Italian Mediterranean in a bottle. Rosemary, sage, lemon myrtle, juniper. Complex and herbal and absolutely worth making this drink for.
What You'll Need — serves 1
- 45 ml Tuscan Gin
- 20 ml fresh lemon juice
- 15 ml rosemary simple syrup (steep a fresh rosemary sprig in hot 1:1 syrup for 10 minutes, strain and cool)
- 90 ml dry prosecco, very cold
- Ice (for the shaker — this drink is served over ice in a wine glass)
- Lemon slice and fresh rosemary sprig (garnish)
Glass: Large wine glass, filled with ice
Garnish: Lemon slice, fresh rosemary
Instructions
- Combine gin, lemon juice and rosemary syrup in a shaker over ice. Shake well for 8–10 seconds.
- Fill a large wine glass with fresh ice.
- Strain the shaker mix over the ice.
- Top slowly with cold prosecco poured down the side of the glass to keep the fizz.
- Stir once gently from the bottom.
- Add a lemon slice and a rosemary sprig — press it against the glass or rest it across the ice.
The Story
The Tuscan Gin was a labour of love — finding the balance between authentic Italian botanicals and the clean structure of a good gin. Rosemary is the loudest note, with sage and lemon myrtle providing depth. This cocktail lets all of that breathe, with the prosecco adding a lightness that keeps it from being heavy.
The rosemary syrup takes 15 minutes to make and keeps for two weeks in the fridge. Make extra.
