The Spirit
Distillers Cut Dry Gin β our flagship. Clean juniper, citrus peel, a subtle pepper finish. It was made to be showcased, not buried.
What You'll Need β serves 1
- 60 ml Distillers Cut Dry Gin
- 150 ml premium Indian tonic water (Fever-Tree or Capi)
- 3 slices fresh cucumber
- 2 sprigs fresh thyme
- Ice β big cubes if you have them
Glass: Large balloon or copa glass
Garnish: Cucumber ribbons, fresh thyme
Instructions
- Fill a large balloon glass generously with ice.
- Pour the gin directly over the ice.
- Top with tonic water β pour slowly down the inside of the glass to preserve the fizz.
- Gently press the cucumber slices against the inside of the glass so they're visible.
- Slap the thyme sprigs between your palms once to release the oils, then rest them across the ice.
- No stirring. Let it breathe for a moment.
The Story
The G&T is the simplest test of any gin, and our Distillers Cut passes it every time. No tricks needed here β just good gin, good tonic, and a little patience. This is how we serve it at the shed on a Saturday afternoon when the doors are open and someone's done the drive up from Beechworth.
> Use Indian tonic, not diet. The quinine balance matters and the bitterness is doing real work here.
