Smoked Tea Tree Gin — our most unusual gin. Tea tree, coastal wattle, and a genuine smokiness that shouldn''t work but absolutely does.
What You'll Need — serves 1
- —60 ml Smoked Tea Tree Gin
- —25 ml fresh lemon juice
- —20 ml simple syrup
- —1 egg white (or 30 ml aquafaba for vegan)
- —2 dashes Angostura bitters
- —Ice
Glass: Chilled coupe Garnish: Angostura bitters dots on foam
Instructions
- 1Combine gin, lemon juice, syrup and egg white in a shaker with no ice. Close and shake vigorously for 15 seconds — this is the dry shake, and it emulsifies the egg white.
- 2Add a full scoop of ice. Shake again hard for 10 seconds.
- 3Double-strain through both strainers into a chilled coupe.
- 4Wait 30 seconds for the foam to rise and settle.
- 5Use a dropper or teaspoon to place 3–4 dots of Angostura bitters on the foam surface. Drag a toothpick through them to create a simple pattern.

The Smoked Tea Tree Gin is the gin we make for ourselves first. Coastal tea tree, wattle blossom, and a cold-smoke process that adds a layer of complexity we couldn''t get any other way. In a sour — with the egg white''s silky texture and the citrus cutting through the smoke — it finds its perfect expression.
The bitters on foam isn''t just decorative. It perfumes the nose and is the first thing you smell as you lift the glass.
