High Country Kick — our 200ml chilli and ginger gin. It builds warmth as you drink it. In a Mule, that warmth layers with the ginger beer for something that has real character.
What You'll Need — serves 1
- 40 ml High Country Kick
- 150 ml ginger beer — use quality (Bundaberg, Fever-Tree or Capi)
- 15 ml fresh lime juice
- 2 dashes Angostura bitters
- Lime wheel, fresh ginger slice
- Crushed ice if possible, otherwise cubes
Glass: Copper mule mug or highball, crushed ice
Garnish: Lime wheel, thin fresh ginger slice
Instructions
- Fill a copper mug or highball with crushed ice — pack it in.
- Add High Country Kick and lime juice.
- Top with ginger beer poured slowly down the side.
- Add bitters on top without stirring — let them bleed down through the drink naturally.
- Garnish with a lime wheel and a thin slice of fresh ginger perched on the rim.
